Pork Cutlets

Ingredients
- 4 ea pork loin or pork shoulder chop, 3/4" cut
- 3/4 C rice flour
- 1 egg, beaten
- 1 1/2 C bread crumbs
- 2 T cornstarch
Instructions
- Pound the chops to 3/8" thick, then season.
- Place the flour in a round Pyrex dish, the egg in a second Pyrex dish, and the bread crumbs and cornstarch in a third Pyrex dish. Optionally add seasoning to the bread crumb mixture.
- Dredge each chop through the flour, egg, then bread crumbs, then fry in 350 oil until golden on both sides and cooked through. Drain on paper towels.
- Plate and serve.
